The spice mixture makes the soup very warming up, perfect for autumn and winter time. It is very comforting dish and makes you feel really good. Rich in orange and red phytonutrients, very important anti-oxidants for our body. The recipe for 6 portions or even more.
2 onions
4 garlic gloves
3 ribs celery
2 sweet potatoes
3 red bell peppers
1,5 teaspoon kumin
1,5 teaspoon coriander
1 teaspoon turmeric
1/4 teaspoon nutmeg
1/4 teaspoon black pepper
a pinch of cayenne pepper
1/4 teaspoon salt
1 cann diced tomatoes
1 can coconut milk
4 spoons coconut oil
2 glasses of water or more if the soup is too thick
400g red lentil
fresh parsley or coriander for garnish
Chop onions and fry on on coconut oil, add chopped garlic and spices and fry for another 5 minutes. Cut vegetables and add to the pot and fry a bit more in order to get best flavours from the spices and vegetables. Add water and tomatoes and cook for 15 minutes. Then add lentils and cook for another 15 minutes till the vegetables and lentils are soft. At the end add coconut milk and bring to boiling. The soup is ready :)
